Unfortunately what these AI companies do is legal, thanks to exploiting an odd little loophole in copyright law. Stephen Zapata Art has a good video on his channel explaining how that particular loophole works.
Something I notice that you didn't mention (and probably deliberately avoided) was how AI art bots are being used to generate deepfake... adult material, including "revenge" adult material. Some of the major art sites (the ones that don't outright ban the stuff, at least) have been getting absolutely flooded with AI-generated CSEM.
