I think a lot of people confuse image resolution, scale and detail with artistic quality. I've recently gotten more into pixelart, and you can do a whole bunch with very little if you put a bit of thought into it. I also think it's one of the more accessible branches of visual art, since there are literally only so many mistakes you can make because of the reduced number of pixels you're working with.
And, art doesn't even have to be particularly good or original in order to be art. I'd take crappily drawn fanart over an AI landscape any day, because someone put effort and love for the source material into that fanart, while the landscape is probably much less dear to the person who made it.
