I think that the real reason is that the training data is generally better when it comes from a source where people have written politely. Remember that LLMs predict words based on your prompt and the superimposed text that they have read. You don't want responses that lean on information from 4chan or some Twitter flame war, you want it to use the learned context from solid, useful conversations.
