I don't think it has to be either/or, I think it can be both/and.
Yes, some people might be induced to delusional psychosis by LLMs, but it is also true that many rational and skeptical observers can hypothesize sentience (or sapience or the passing of hyper-specific Touring Tests) without being any less qualified to do so than the next person.
Never forget there are some people who doubt that other people are anything but NPCs within the exclusive video game of their Life. They'll question your humanity based from their subjective reality.
And once someone isn't "human" then it's much easier to justify doing anything you want to them.
