For your analogy to make sense, the disabled person would have to be saying that they want to go up and down stairs, on their own, as a hobby/as a form of recreational activity, and everyone else would be going "Sure, go for it." Telling AI slop generators and their users to eat coprolite is not comparable to advocating for the removal of elevators. Arguing that disabled people can't create art without AI or that AI slop creators are somehow disabled is, however, ableist bad-faith arguments.
AI slop creators' problem is that they value their own selfish convenience above absolutely everything else. Their problem is that they have arms and can paint but haven't ever even tried to put in the time and effort to learn how to do it. They are too lazy to be creators but still want to feel like they are creators, and be praised by others for being creators, without ever creating anything. Which is a behaviour you can see in another group of people: Plagiarists, grifters, and scam artists.
