Because you don't need to. Spaghetti code that is functional is functional code.
If you think about what they're really saying. they're saying, by virtue of claiming most code AI is trained on is mediocre then most programmers are mediocre.
But unless you're working on some secure high end service, app or whatever you really do not need perfect code, it's better, but the "bad" code functions just the same.
