It isn't hard to know how it would make sense. If the robot costs less for the same or better labor result, well, there's your answer.
Like, sure, you can have a cashier, but a touch screen does the job, doesn't want health insurance, will in theory break less often than the cashier calls in, doesn't require training when you do have to replace it, won't get sexually harassed by the manager, gets you a tax deduction (depreciation) rather than requiring you to pay various taxes, and so on.
And from the stand point of a company like Subway or McDonalds, they can require the use of officially approved robots, which would provide yet another way to funnel money from a franchisee to themselves.
Of course, the cost per robot needs to be lower for a low wage job, and there's the question of how well the robot will hold up over time. But, regardless, if cost is lower, then line goes up.
