There's a difference between inspiration and imitation. When someone watches a video tutorial, they understand the basics of drawing. It's not considered theft UNLESS THEY COPY SOMEONE ELSE'S ART AND GIVE THEMSELVES CREDIT.
AI on the otherhand imitates from existing images from its database. If you wipe all of the art of something from its database and lock it away from ever accessing them and only leaving them with the real life image of said thing, then tell it to generate it in, let's say a cartoonish style, it would struggle, if not fail to generate what you want EVEN IF IT KNOWS WHAT THE DEFINITION OF CARTOON IS. It can't make its own artstyle unlike humans, it can only imitate because it lacks creativity. Take cave paintings as an example, humans back then can't perfectly imitate what a mammoth looks like on a cave painting, and that's when an artstyle is developed through limitations.
To make it more simple to understand, humans can see one thing and draw it in a different style. Meanwhile if an AI is fed and image of said thing and nothing else and then told to generate an image of said thing in a different style, it fails to do so because all it can do is imitate extremely accurately with zero imagination.
