Well humans uses only two eyes, so clearly vision only works. Going with cameras only simplified sensor set, as now you only have one type for quick processing. Could you get more information about surrounding by using bunch of extra sensors? Yes. But for system to be available for most people it needs to be, well, available. Now Tesla's come with all the needed hardware in every single car you will use it or not, because its cheap enough to be included from the factory and you don't need to have 50 different trim variations.
What we only need is good AI with appropriate compute unit.
