that is A Function of an LLM, a thing it can do, not the processes behind it or, 'the way it works' as it were. What you said is like saying a frying pan works by making eggs. When we say we don't know how LLMs work, we mean we don't understand the processes by which they arrive at that aggregation of text. For a wide variety of reasons at that, the least of which being that they were not programmed by humans.
