We don’t know what it is, but we know more than anything the state of it. You know nothing better than the reality of your immediate thoughts, feelings, and experiences. Everything else is up for debate.
Given that, we can understand things that are not computable. Like you can understand that your mother loves you and what that means, or what it might feel like. Or you can understand a truth that can’t be proven, etc. So while I agree we don’t know if it’s in theory possible for machines to get there, we can say the current technology even at the very cutting edge doesn’t scratch the surface.
Likely AI is just very good at modelling our own UNCONSCIOUS information processes, a small subset of a much higher order conscious intelligence we possess.
