Litterally the only way they could come close to current ai models completely replacing artists was by using it to specifically recreate an already existing image.
You're just factually wrong. You're only looking at the low effort generation people make with 0 changes made to the setting and no attempt to guide it any particular direction. Of course those all look similar. If you look at art from a single creator its also all going to look the same unless they went out of their way to change style
