Because its a new technology and people are stupid lol.
Once the novelty has worn off (as it already has), people will get mad at how inflexible and idiotic it is, and begin to demand more and more controll over it.
Eventually your gonna get tools like ComfyUI. Where people setup whole entire node graphs and hand draw 90% of the process anyways, and use the AI as an actual TOOL to accelerate certain parts of their workflow
