You want fundemantals? Start with C. Simple language, not many features and language concepts you have to memorize unlike other languages. This is big advantage for you to actually learn the fundamentals. You will question yourself "why even bother", because there is no real exciting use case and it's gonna be painful. Don't know where to start? Try with sockets, create your own basic rudimentary client and server.
Bonus: It's easier going from C to other languages.
You want practical knowledge? Start creating your own projects with python (can be any language really). No, not the to-do apps or tutorials, but the stuff you actually want the program to do for you. It's gonna be painful.
The key part you have to understand: you have to feel the pain, if you don't -> you don't learn.
Avoid copy pasting ChatGPT. Simple rule of thumb: If you can't write it yourself, you don't know shit.
