I literally always think of 3blue1brown's videos about AI whenever someone says we don't know how they work. Like, we can't understand exactly how an LLM is encoding the meaning of a single word or phrase, but we understand generally how it works and produces all this emergent behavior nonetheless.
It is however correct that we don't really have a good way of predicting their specific behavior and thus shouldn't be trying to cram them into so many completely inappropriate applications.
