Sapience was made up to disqualify non-humans from moral and ethical considerations. Sentience was the previous standard, and non-humans were generally considered to be automotons.
At the end of the day, the difference is anthropocentrism. Sapience as a term is a form of post hoc justification for the dismissal of concerns regarding non-human treatment and rights.
Animal rights and AI ethics are examples of this. The only ethics that exist are human, necessarily. Animals are subject but not party to the limitations described by animal rights.
If you take out the anthropocentrism, it becomes apparent that humanity is committing atrocities. So, when non-human sentience couldn't be denied, sapience replaced it as the standard.
