For the blue collar plumbing work, I think the way AI will replace humans will be similar to how automation replaced humans in factories. We used to have high paying factories filled with humans, now there are far fewer humans operating the machines that do the job must faster and cheaper than when humans did it. I think its reasonable that in 10-20 years, we'll have tools that are run by an AI that will diagnose and fix your plumbing. It won't be a humanoid robot driving down the road and walking into your home, it will be a box or amalgamation tool that an unskilled human carries and drives around from worksite to worksite. The underpaid human will drive it around, carry it into your home, and set it up to do the job. Because the human operator only needs to drive the tool around, carry it inside, and plug it in, they won't need to be certified and won't get paid as much. The box will cost like 1-5k+, but anyone could buy it and start their own plumbing service, saturating the market and lowering salaries across the board in the field. This will apply to many other blue collar services as well, that it won't be a walking talking robot doing it, it will instead be used as a tool to do a majority of the work faster and cheaper than a human. All technology keeps getting more advanced, cheaper, smaller, and lighter. Right now it is largely targeting white collar and art because those are less physically required, but it won't stop there, it will eventually go after blue collar as well.
