It's little different than the obstacle that "human resources" (HR) departments presented before AI. I've never gotten an engineering job by going through HR; it's always because someone knew me or I knew someone and an interview was arranged that completely circumvented HR. We'd go to HR afterward to fill out the employment paperwork, that's all. If companies such as Workday are using AI to screen and reject job applicants, it is time to fight fire with fire. Feed the job postings into an AI large language model and have it generate "perfect candidate" profiles to feed into Workday, et al. The goal is to make it past the AI screening and talk face-to-face with a hiring manager.
