I once used AI as inspiration for art of a dragon I wanted to make. Because of the alien nature, the AI gave me a rather fantastic concept for it; but I didn't use the AI for the actual reference. That image was nothing more than a garbled pattern, but I feel that's probably one of the "best" uses for it. And once again, I didn't even really use it for anything than inspiration
