It's a really sad reality we live in. Unfortunately, the only way for this to get better, is for artists to start suing AI companies for copyright infringement. And more importantly, to win. Once there's a ruling on file that says that this is copyright infringement and AI companies are forced to pay out, they'll become opt in. This will never stop theft entirely, but it should at least stop the profiting on a large scale.
