1. It probably isn't memorizing *everything* in the training data. There is a limit to the amount of information it can or will memorize and it's often better to generalize. Odds are your conversation wasn't that special to it (sorry).
2. You can download and run local LLMs that run on your machine if you have a GPU made less than a decade ago and don't phone home. They won't be as large or as good or as fast as 4o, but they will be relatively secure and you could even fine tune them yourself.
