7:45 The techinically correct term for the idea you're getting at here is an "interpolation." From a scientific/signal processing perspective, what a diffusion model is doing, is "interpolating" by trying to create the closest fit it can to an image which matches the exact abstract descriptors it associates your prompt with. Depending on the architecture, if you knew the exact seed and token sequence for one of the reference art pieces, it might even be possible for it to spit out the exact piece of art in its dataset (though usually that won't work because interpolating is actually faster than searching when you're talking datasets the size of the entire internet). I'm someone who does ML research for a living, and I would 100% agree with you that it's outright theft in basically any creative field (art, writing, mathematics), as it's basically just an automated form of paraphrasing its dataset without providing citation (also known as plagiarism, which is a form of theft).
