I look at "AI Apocalypse" with the same attitude as nuclear war or a huge asteroid. These are things over which I have zero control. There's nothing I can do about it, so I'm not going to spend however much time I have left being afraid. That doesn't mean living in ignorance, just accepting that we've never really had control. And no I'm not stocking rations and moving to a cabin in the middle of nowhere. Life for me is about quality over quantity and if civilization ends I'm find going down with it, instead of spending the last few decades in pain, isolation, and depression.
