This is because "most probable" isn't the most interesting. Its the result that you get if you follow all the rules. Art is about knowing when to tastefully break the rules to come up with something unlikely which is the opposite of "most probable." AI cannot break the rules on its own so it can only create art that looks like its made from a factory.
