Short answer: vanity
Long answer: because visual artists don’t want to concede that any of their work is copyright-free. They genuinely believe anything they make is rooted 100% in originality that can only be a cheap facsimile if it’s made by AI.
“A painting of Walter White playing a yellow Dingwall bass guitar in the style of surrealism + macro composition” is not a stolen image just because it uses a data set with your work in it.
