I may be wrong but as far as I can understand AI does not have access to "everything humans have ever written". Due to copyright law most of the contents of the British Library (one of the largest libraries in the world with 200 million items including 14 million books) is not available to AI in full text apart from items published for free access on the internet. This information which includes books and journals is what academic institutions all over the world consider to be credible knowledge. AI alternatively accesses unregulated information that is made freely available on the internet and whatever was included in its original programming. Concerning that some hold AI's answers to our questions in such high regard.
