The only time I see AI image generation as being useful is for a quick prototype. Get an idea for what you want an actual artist to create. I write books, so I use AI for a quick cover before I get to the stage when I want to hire an artist to create one for me prior to publication. It also gives the artist a starting point for what I'm looking for since I'm not a good artist and would otherwise struggle to convey what it is I'm looking for.
