The Ai figures are not emoting properly. They're nodding their heads, sure, but look at how Mavis's eyes behave. She's showing her feelings and actions without even having to say anything. Animators make these things, because people do these things and they have to study people for an insane amount of time just to create these less than a minute long reactions. The Ai cannot recreate it because it is not studying people in real life and does not understand the nuance of human emotions
