A use of AI image generators that makes sense to me is for mock-ups and placeholders.
Maybe an author who isn't used to drawing generates a few images of scenes in their book which they want illustrated, then passes the most accurate results onto a human artist alongside a few notes related to details they want emphasized. Then the artist can create better version of them.
Maybe a software developer makes a website and shows a mock-up to their customer with a few AI generated images that somewhat match the aesthetic of the customer's business.
Maybe a kid is looking for just any kind of creative outlet and prompts it to see what their ideas can look like.
If the AI image is the product itself it's no longer as valuable, 'cause anyone can prompt a machine and make it do the rest of the work. Not everyone has learned how to draw, and if they had, everyone's artstyles and ideas for what to make would be different and thus more unique and valuable than what machines generate.
