I understand what you say. However, it is truly inevetible. I am not saying "stealing" art or private work is fine. But let's be honest. It will only take another year or 2 maximum to reach same level. Companies can pay artists or use free websites to make new datasets and after that, it is done forever.
Personally, I don't think the work of AI is different from inspiration. As long as it is not the same picture, you cannot claim copyright.
What do you do with copycat artists? It is their work at the end of the day!
Many people can do some minor modification on the AI generated photo and the problem is done for.
I understand the frustration of artists, but you cannot do anything about this really.
