I'm kind of disagreeing with your take on illustration, though I think it'll still be around, but far less of it. I think AI (usually) stands out as such, and has a cheap feeling about it akin to stock images.
So quality brands will continue using illustration, but now many of the smaller miscellaneous things that illustrators may have also done, will likely be done by the designer, as you said.
There will also be certain products, such as books or music, that you absolutely do not want anyone associating with AI, so it'd be best to hire an actual illustrator for a hand crafted visual.
