In my opinion, youtube was always known for intentionally lowering video/audio bitrates which explains the noticable drop in quality, that helps keep the file sizes smaller for their servers, and in turn, cuts down on cost. And as their encoding algorithms have became more aggressive they've started relying on ai upscaling & enhancing to recover some of the lost details, giving the result a bit of that nice ai-generated flavor that everyone loves lol, I might be wrong tho :)
