It works well for language because as it is an inter-subjectively authored human science topic. The MEDIAN is what the NORM is. If majority of people use a word in certain way the word becomes means that.
NATURAL sciences do not work like that. If there is a human agnostic objective way of doing X the best it will not be decided by median values but simply the calculation behind it.
That point he drew right into the nature of things is not only about programming but also about all things which are either Logic/Maths or Natural science related. (Chemistry, Biology, Physics etc)
LLMs will flourish in human sciences and predicting human based patterns but will absolutely fail to produce stellar results in natural sciences.
