The most advance AI now still cannot figure how lights works. It cannot control how glossy an object would be or the direction is not constant.
On the other hand, AI can generate small detail. But if you notice that the small detail that AI generated, is predictable.
In the real life situation, no matter how good you are as photographer or editing skill or how good environment, there will always be unexpected or unpredictable element in the photo. The result will always bland and have less attractive than AI
The reason AI is very attractive is because AI learn from the best data. Not the poor data. While human is in between
