Let's just forget for a moment about the issue of human consciousness and intelligence and just focus exclusively on what we know these artificial systems to be objectively. They are essentially operating on the same set of principles that drive most naturally-appearing systems of order, such as the paths of rivers or the formations of crystals. They are cordoning off abstract spaces and then pushing abstract quanta through those spaces, and that quanta then interacts with the geometry of the space to reveal the path of least resistance based on the initial parameters. Whatever you can say about natural structures also applies to the structures that form within artificial neural networks.
Also, the point about the fact that the training data includes little to no examples of anybody admitting when they don't know the answers to questions was such an epiphany. Of course you would never expect any system to demonstrate an awareness of its own lack of knowledge when it's never seen any examples of that!
