I would use the AI at work. If they're paying you and paying for it and they want you to use it then use it. Get the benefit and get your money. If you want to learn then work on a few personal projects in your free time. Yeah, I agree going full agent mode isn't always fun but if its the route people want you to go then there's no reason not to for now. Companies aren't going to ask you in questions about super technical things, at least not anymore. They will want to hear about how much work and cool projects you finished at your old jobs.
