I don't understand how AI art *isn't* copyrightable. Whatever you input to the AI, the output does not exist until you generate it. It is a brand new piece of art. The argument for what art pieces or artists the AI uses for reference should be null and void as most works are publicly available, and that would open the biggest pandora's box of all time. That would essentially mean *anything* used that has referenced *anything* would not be copyrightable, which is laughable. About 80% of all music would lose rights, if your show has a blue camera tint like twilight, not copyrightable, if your art piece looks like it has a similar style to anyone else on earth, not copyrightable. Total joke. The art you tell the AI you want to make *does not exist* until you create it. It is a brand new, transformative, unique piece of art that you spawned from your own ideas.
