You don't have control over the data, it's some company that's collecting it and managing it and selling it, or blackmailing or extorting people with it. With Apple products problems are that their systems aren't open source so people don't really know what Apple is doing with it. I give them some credit as they do really seem to be sticking by some privacy principles, and their business model isn't built on using user data, but it's still not known and not audited, and with any type of pressure they can switch their business model, users don't have control over that. On top of that the walled garden nature of the ecosystem is that you have a bunch of different applications and platforms sharing data that by default one would think shouldn't be shared. If I buy a watch and I use a laptop and a phone, those are separate devices to me and I wouldn't want to send information from one to the other without doing so explicitly. For example a bunch of celebrity nude pictures were taken and sold a while back because of that, people accessed the celebrities' icloud accounts even though the users didn't necessarily explicitly put anything on their icloud accounts, the different devices they were using just automatically shared data with each other, and to the icloud account.
The short of it is that the users don't own their data and don't have control over their data. If for the sake of convenience they want to use a service to host their data for them, then that service needs to do it in a way where it also doesn't have access or control of the data, it does only the hosting and lets applications run on top of it, right now services like fitbit don't do that. We have the cryptographic standards to allow those kinds of services too in case it sounds odd.
